NEW YORK (PIX11) — Chef James ‘JR’ Robinson spent his childhood in and out of homeless shelters since age 12.

Now, he is the founder and executive chef of KitchenCray, and he was a contestant on the current season of Hell’s Kitchen.

Below are two of his famous recipes: 

Sweet Potato Waffle
3cups AP flour
2cup whole milk
1/2 cup melted butter
2T brown sugar
3 t baking powder
1/2 T vanilla extract
2oz sweet potato purée
1 t white sugar

Preheat waffle iron. Whisk eggs in large bowl with until fluffy. Whisk in flour, milk, melted butter, sugar, baking powder, sweet potato purée, brown sugar, salt and vanilla, just until smooth.
Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron cook until done. Top with candied yams

Shrimp and grits

6 jumbo shrimp
1/2 tomato
1/2 red onion
1oz Parsley
4oz cheddar cheese
1oz parmasean cheese
1/2 cup grits
1/2 cup chicken stock
Salt and pepper to taste

Small pot filled with 1 cup of water bring to a boil, add 1/2 cup of grits stir the first 15mins then cover and let it cook for about 5 more mins on low heat,add heavy cream and cheese.

Place med pan over a med fire, add oil to the pan once it’s hot add shrimp and the remaining ingredients cook for 6mins until shrimp are done.
