Morning can be such a hectic time of day, we all know how easy it is to skip breakfast. But luckily lifestyle expert, Limor Suss from TrendsGirl.com stopped by to show us some easy, make-ahead, grab-and-go breakfasts.
Breakfast Popsicles
• 1 Cup Noosa Vanilla flavored Yogurt (can use vanilla or plain yogurt)
• ½ cup Milk (Soy, Almond, all work)
• 1 cup Blueberries
• 2 tsp Sweetener (Agave, Pure maple syrup, etc)
*optional depending on blueberry tartness
• ¼ cup Granola – (I used Kind Healthy Grain Clusters in Vanilla Blueberry)
Directions:
1) Over medium heat, simmer blueberries down in ½ cup of water (about 5 min) (If the blueberries are tart, add sweetener to taste)
2) In a bowl, blend together vanilla yogurt and milk
3) Mix in the granola into the yogurt mixture
4) Add yogurt mixture and blueberries into mold, alternating between layers.
5) Freeze for at least 4 hours.
6) Enjoy
Oatmeal “Cupcakes”
Ingredients
• 2 cups old fashioned oats
• 1 tsp pumpkin pie seasoning (can use just cinnamon too)
• 1 tsp baking powder
• 1 cup milk (soy, almond, all work)
• 1 ripe banana
• 1 egg
• 2 tsp sweetener (Agave, maple syrup, etc) *optional
Directions
1. Preheat Oven to 350 degrees
2. Mix all of the dry ingredients, set aside
3. Mix all of the wet ingredients
4. Stir in all of the dry ingredients into the wet ingredients, until the
5. Pour into muffin pan
6. Bake for 30 min
Oatmeal Energy Bites
Ingredients
• 1 cup old fashioned oats
• ½ cup natural creamy peanut butter
• ¼ cup flaxseed/chia blend
Directions
1. Mix all of the ingredients together
2. Put in the fridge for 25 min to harden
3. Form into small balls
Egg Cups
Ingredients
• Turkey Bacon
• 1 dozen eggs
• Cooking Spray
• Bake turkey bacon on a parchment lined cookie sheet at 400 degrees for about 8 minutes. (You don’t want the bacon too crispy)
• Spray a muffin pan with cooking spray.
• Add a slice of bacon to each section of a muffin tin, covering the walls
• Crack egg carefully into each bacon “hole”
• Bake at 350 degrees for 10-15 minutes (depending on oven)
Chia Pudding
Ingredients
• 1 cup Vanilla Soy Milk
• ¼ cup chia seeds
• ½ tbsp pumpkin pie spice (or cinnamon)
• 1 tsp vanilla extract
• 1 tsp agave or maple syrup
1. Mix all of the ingredients together in a mason jar.
2. Shake.
3. Place in fridge overnight
