Drinks are great at parities, but food is key! And serving up appetizers doesn’t have to be labor intensive.

Pulled Chicken Toasts with Forever Slaw

Super Delicious.  Super Easy.   Three ingredient chicken, with a super healthy slaw topping dubbed ‘forever’ slaw because it can be made far in advance. Set it & forget it.

Equipment:   1 crock pot

Yield: Approximately 24 4 oz sliders

Ingredients:

6 lbs Boneless & Skinless chicken thighs

1 cup chicken stock (preferably homemade, but store bought is fine in a pinch – low sodium if you want to control the salt)

1 jar Fourth Creek “Hint of Habanero”  Red Pepper Relish

Toasted brioche

Combine chicken, stock and red pepper relish in slow cooker and set to low for 6-8 hours.  Remove the chicken thighs & shred with 2 forks.  Add the pulled chicken back into the sauce.

Forever Slaw:

Prep: 5-10 minutes, let sit for at least 10 minutes, or for up to three days prior, covered in the fridge.

1 cup shredded napa cabbage

1 cup shredded purple cabbage

2 shredded carrots

2 tbsp lemon juice or vinegar of your choice

1/2 tsp salt

You can make this the day of your party.  We prefer to start it the night before and  store in the fridge during day so the flavors develop more. All you do is mix all of the slaw ingredients together and leave it to the side. Just gently reheat the chicken in slow the cooker before your guests arrive, combine with the room-temperature slaw on top of a toasted (and if you wish, buttered!) piece of brioche,  and serve them up on a platter to watch them be devoured!
