Feast of the Seven Fishes at Tavola

Recipe for Tavola's Eel Agrodolce (Sweet & Sour Eel)


1 large red onion Caramelized
3 Crushed garlic cloves
2 cups extra virgin olive oil (1 1/2 cups frying)
4 tbsp. Red wine vinegar
2 tbsp. Sugar
4 Bay leaves
1 tsp. Juniper berries


  • Skin, flour and fry the eel.
  • Add the fried eel to the simmered sauce.
  • Toss with 2 sprigs fresh mint.
