1. Chopped Kale Caesar
Kale, avocado cilantro/citrus Caesar dressing, sweet deep fried plantains
2. Waldorf Salad
Chopped baby spinach, dried cranberries, diced red onion, walnuts, cubed jicama, queso blanco cubes, Cranberry cumin vinaigrette (olive oil, cranberry puree, lime juice, cumin, salt, & pepper)
3. Grilled Chicken
Baby arugula, sliced grilled chicken breast
Pineapple/bell pepper pico de gallo (cubed pineapple, red bell pepper, diced red onion, cilantro, & fresh lime juice, salt/pepper)
Ancho Chile/Chipotle ranch dressing
4. Seasonal Fruit Salad
Watermelon, kiwi, melon, cantaloupe, star fruit, papaya, strawberries, pineapple
Citrus/mint champagne dressing (fresh lime/lemon, muddled mint, sparkling wine or champagne, salt/pepper)
