Simple Mediterranean Mezze Platter

1 eggplant, cut in 1/2 inch cubes
1-2 cups feta cheese, chunks
1-2 cups hummus
2 cucumbers, sliced in 2 inch strips
2 cups grape tomatoes, halved
2 cups olives
pita break or rustic French bread
olive oil

Preheat oven to 350 degrees.

In a medium bowl, drizzle eggplant cubes with 1 tbsp olive oil and and season with salt and pepper.  Transfer to a baking dish and bake for 15-20 minutes. Remove from oven and set aside.

On a large platter center hummus in the middle. Arrange remaining ingredients around the hummus. Serve at room temperature.

Spicy Pork Chili Bowls

2 pounds ground pork
1 large bell green peppers, chopped
1 (15-ounce) can whole kernel sweet corn, drained
1 small chili pepper, diced (with seeds)
1 teaspoon chili powder
1 teaspoon cayenne pepper
4 garlic cloves, minced
2 tablespoons olive oil
1 large onion, chopped
1 (8-ounce) can tomato sauce
1 can (16-ounce) can pink beans, drained
2 cups water
1 teaspoon cumin
1 tablespoon oregano
1/2 teaspoon black pepper
salt to taste

Toppings (optional):
sour cream
shredded cheddar cheese

In a large dutch oven heat oil over medium high heat. Add onions and saute for approximately 5 minutes. Add garlic and bell and chili pepper to pot and continue to saute until onions become translucent. Add ground pork, oregano, cumin, black pepper, chili powder and cayenne pepper. Mix well. Saute pork while breaking it up with a spoon until browned.

Reduce to medium heat. Add water, tomato sauce, beans and corn. Simmer for 25-30 minutes stirring occasionally until chili thickens. (for thicker chili, add 1/2 teaspoon cornmeal) Season with salt to taste.

Top with a dollop of sour cream or sprinkle of shredded cheddar cheese.

Serve over rice.

Hot Caprese Dip

2 cups fresh mozzarella balls
2 cups grape tomatoes, halved, seeded and juiced
3/4 cup fresh basil, chopped
cracked black pepper

Preheat oven to 350 degrees.

In a medium bowl combine cheese, tomato and basil. Season with black pepper. Toss well and transfer to a baking dish.  Transfer to oven and bake until cheese melts (approximately 12-15 minutes). For a golden top, broil for 2-3 minutes.
