Ribs with Homemade Raspberry Chipotle Barbecue Sauce
Prep: 5 minutes
Cook: 3 hours and 40 minutes
Serves: 4 or 8 as an appetizer

Ingredients:
1 -6-ounce package of fresh raspberries
3 chipotle peppers from a can of chipotles in adobo more if you like things extra spicy
2 tablespoons of the adobo sauce from the peppers
1 tablespoon tomato paste from a tube
5 tablespoons cider vinegar
2 tablespoons light brown sugar
1 tablespoon soy sauce
3 cloves garlic peeled
2 tablespoons water more if your sauce is extra thick
4 1/2 pounds of pork ribs
Salt and pepper to generously coat ribs

Directions:
Preheat oven to 400
Place the ribs on a roasting pan and generously season with salt and pepper on both sides and place in the oven and cook for 20 minutes.
After the 20 minutes has passed flip the ribs over and continue to cook for 20 more minutes.
While the ribs are cooking add all the ingredients to a blender except the ribs and salt and pepper and pulse on high to combine to make a nice thick sauce and scrape into a bowl.
Reduce the heat in the oven to 325 and baste the ribs with the sauce and continue to cook for 1 hour.
Repeat this for 2 more hours basting once an hour for a total of 3 hours cooking time at 325.
Serve with the extra sauce on the side and plenty of paper towels, as these are finger licking good and messy fun.

Crispy Fish Tacos with Avocado Citrus Serrano Salsa and Tangy Slaw
Prep: 15 minutes
Cook:  6-8 minutes
Serves: 4 (2 tacos per serving)

Ingredients:
Salsa
3 serrano peppers roasted peeled seeded and chopped
2 blood oranges or regular oranges cut into segments
2 tablespoons fresh lime juice
1 avocado diced
2 tablespoons chopped cilantro
Salt and pepper to taste
Fish
1 cup all purpose flour
1 teaspoon salt
½ teaspoon garlic powder onion powder and cayenne pepper
1 cup beer
1 ½ pounds halibut or other sturdy white flesh fish like snapper mahi mahi…cut into ½ inch strips
½ cup all purpose flour
Vegetable oil for frying fish about 4-5 cups
Slaw
3 packed cups slaw mix
1/4 cup sliced scallions
1/4 cup plain Greek yoghurt
2 tablespoons fresh lime juice
Salt and pepper to taste
10 tortillas corn or flour warmed
Lime wedges if desired

Directions:
Add all the ingredients for the salsa to a bowl and stir to combine and set aside for the flavors to meld with you prepare everything else.
Add the vegetable oil to a skillet with high sides over medium heat.

To a mixing bowl add the flour salt and spices and whisk to combine and slowly add the beer to make a thick batter.

Pat the fish dry with paper towels and coat with the remaining 1/2 cup of flour.

Dip a few pieces of fish into the beer batter shaking to remove the excess and add them to the hot oil.

Cook the fish turning once for 2-3 minutes per side until golden brown and transfer to paper towels to drain and repeat until all the fish is fried.
Add the slaw ingredients to a mixing bowl and toss to combine season with salt and pepper to taste.
To assemble the taco place about 2 –3 tablespoons of slaw on a tortilla top with 2 pieces of fried fish and 1-2 tablespoons of salsa and a wedge of lime.

Pink Grapefruit Bars
Prep time: 10 minutes
Cook time: 33-38 minutes
Servings: 16 (1 ½ inch bars)

Ingredients:
Crust
1 1/3 cups all purpose flour
1/4 cup confectioner’s sugar
½ teaspoon ground ginger
Good pinch salt
1 stick butter cut into small pieces
Topping
1 tablespoon finely grated grapefruit zest
½ cup freshly squeezed pink grapefruit juice
1-tablespoon fresh lime juice
3/4-cup confectioner’s sugar
1-tablespoon flour
3 large eggs

Directions:
Preheat oven to 350
Line an 8X8-baking pan in foil leaving a bit hanging over the edge.
In a mixing bowl whisk together the flour confectioners sugar ground ginger and salt.
Using your fingers work in the butter until crumbly then press evenly into the foil lined pan.
Bake the crust for 18-20 minutes or until lightly golden.
While the crust is baking in another mixing bowl whisk together all of the ingredients for the topping until smooth.
When the crust is slightly cooled pour the topping mixture over the crust and place back in the oven and bake for 15-18 minutes or until the edges are golden and the center is set.
