(PIX11)-- Grilling season is here and even if you're a newbie, we have some tips and techniques to turn you into a grill-master!
Ben Mims, food editor of Saveur Magazine, shared these recipes for Grilling 101:
1/4 cup full-fat Greek yogurt
1/2 cup olive oil
1 tbsp. freshly ground black pepper
1 tbsp. allspice
1 1/2 tsp. ground coriander
1 1/2 tsp. ground cumin
1 tsp. cinnamon
1 tsp. kosher salt
6 cloves of garlic, minced
1 small white onion, grated
Combine all ingredients in bowl, add chicken. Cover and refrigerate 1 hour or until ready to use.
Toast 1/4 cup whole fennel seeds and 1/4 cup whole black peppercorns in a medium skillet over medium-high until seeds begin to pop, 1-2 minutes; let cool slightly. Working in batches, transfer to a spice grinder and pulse until coarsest ground. Mix with 1/2 cup crushed red chile flakes in a bowl and then transfer to an airtight container. Store in the refrigerator for up to three months.
