lollipopSpicy Tuna lollipops
1/2lb sushi grade tuna diced
1 ripe avocado finely chopped
1-2 tablespoons Sriracha
1/4 cup mixed black and white sesame seeds.
1/2 teaspoon Sea Salt

In a large bowl, combine the tuna and hot sauce then add in the avocado and salt. Using a small scoop/mellon baller, portion a small amount of the mixture, form into a ball and roll it around in the sesame seeds. Place each ball on the plate and spear with a lollipop stick.

Shrimp Stuffed Baby Potatoes

1/2 lb peeled+deveined shrimp diced

Grated pecorino romano cheese
2 oz american caviar
1 tablespoon of old bay seasoning

Clean the potatoes and roast them for 30 minutes at 400 degrees. Remove them from oven and set aside to cool. Once cooled, cut potatoes in half and use a small scoop/mellon baller to hollow out the center and save the contents.

In a large bowl combine the potato filling, diced shrimp, seasoning, chives, sour cream, cheese and bread crumbs. Mix well.

Spoon the potato mixture back into the hollowed potato halves, place the stuffed potatoes on a baking tray and bake for 20-25 minutes on 400 degrees. Remove potatoes from oven, add a dollop of creme fraiche and top with caviar.
